Vegan Cashew Cheese

Raw Vegan Cheese from Cashews

What you’ll need:
•1 Cup whole raw cashews (soaked in 3 cups water for 24hrs)
•2 tsp fresh lemon juice
•1/2 tsp salt (I use Pink Himalayan)
• 2 turns black pepper
•2 tsp coconut oil
•1/4 Cup water

Directions:
•Soak, drain, and rise your cashews
• Place Cashews with lemon juice, salt, and pepper in food processor and pulse 4 times
• add water and coconut oil and blend for 6 minutes or until smooth- you may need to stop once or twice to get the cashews back to the bottom.
• that’s it! So easy and yummy!

Note: add your favorite flavoring at the end and blend an additional 1-2 minutes. Jalapeño, onion and chive, and strawberry are my favorites!
